General description
Ovalbumin (UniProt: P01012; also known as Allergen Gal d II, Egg albumin, Plakalbumin, Gal d 2) is encoded by the SERPINB14 gene (Gene ID: 396058) in chicken. Ovalbumin is a member of the serine protein inhibitor (serpin) super family, but it considered as a non-inhibitory serpin. It is a storage protein of egg white and may make up about 60% of the total protein in egg white. Ovalbumin provides a major interest for study because its structure provides a model for the structure of the inhibitory serpins. It is known to chelate heavy metals and traps the metal ions within the sulfhydryl bonds of the protein, which prevents the absorption of the metals into the gastrointestinal tract and prevents poisoning.
